Baked Salmon with Walnut-Guava Crust


This recipe features the guava salad dressing and marinade found by following this link (recipe#1).

Ingredients:

2 salmon steaks or fillets (6 oz)
1/2 cup guava marinade
1/3 cup chopped walnuts (or other nut of choice)
salt or soy sauce (optional)

Spread marinade on both sides of the salmon and let it sit for 30 minutes. If you want a saltier flavour, sprinkle salt or soysauce on fish before coating with marinade. Place fillets on a foil covered baking tray and place walnut crumbs in top of the marinade. Bake in toaster oven or regular oven at 400F for 15-20 minutes until fish flakes easily. You may have to cover the top of the fish lightly with foil if it is getting too dark, especially in the toaster oven.

Guava Cake

"This is a unique old recipe using fresh guavas." Recipe from allrecipes.com
Ingredients:
2 cups white sugar
1 cup butter
4 eggs
1 cup guava sauce
1/2 cup guava nectar
3 cups cake flour
1 teaspoon ground nutmeg
1 1/4 teaspoons baking soda
1/4 teaspoon ground cloves
1/4 teaspoon ground cinnamon
Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 13x9 inch pan.
2. Sift together flour, nutmeg, soda, cinnamon, and cloves.
3. In another bowl, mix together guava pulp and juice.
4. In another bowl, cream together butter and sugar. Add eggs, one at a time. Add flour mixture and guava mixture alternately to creamed mixture. Pour batter into prepared pan.
5. Bake at 350 degrees F (175 degrees C) for 30-35 minutes.

Guava Salad Dressing, Dipping Sauce and Marinade


Recipe #1

This first recipe features our ATE or guava paste. It is delicious on a salad of mixed greens, fruit and finely sliced shallots. It can also be used as a marinade for fish, chicken or pork.

Ingredients:

1/3 cup (3 oz) ATE (guava paste)
2/3 cup water
1/4 finely diced shallots or onion

Simmer ingredients in a pot until guava paste is melted and blended fully with the water. 
Add:

1/4 cup rice vinegar
1 teaspoon dark sesame oil

Variations:

1.The sauce thickens when cool and you may want to add more vinegar or lime juice to thin it out.  
2. Add salt or soy sauce if desired
3. A dash or two of hot sauce can be used for a hotter sweet and sour flavour

This salad dressing features our guava sauce

Whisk together:

1/3 cup guava sauce
1/2 cup (125 ml) extra-virgin olive oil
1/4 cup (60 ml) filtered water
Juice of 1 lemon or lime
1 small shallot, minced
1 Tbsp (15 ml) ginger, minced
1 Tbsp (15 ml) honey
1 Tbsp (15 ml) cilantro, chopped

Lively Lemon-Guava Dessert Squares


This light and flavourful low fat dessert does not require any baking and features our guava sauce. It can be frozen and then thawed in the refrigerator before serving. Be sure to note the variations at the bottom of the recipe.

Ingredients:

Crust: 1-1/2 cups chocolate or graham cracker cookie crumbs
           1/4 cup melted butter

Filling: 1- 4 serving size packaged lemon jelly powder ( light or regular)
           1 cup boiling water
           16 ounces evaporated milk, chilled in the fridge
           1/2- 1 cup sugar or granulated sweetener (to taste)
           2 cups guava sauce

Method:

Reserve 1/4 cup crumbs for topping. Combine remaining crumbs with butter and press into the bottom of a 9x13 pan.

Dissolve jelly powder in boiling water and chill in freezer until cool to touch. Meanwhile, in a large bowl, whip evaporated milk until soft peaks form. Stir in sugar, guava sauce and cooled jelly mixture, mixing until thoroughly combined.

Refrigerate until set (at least 2 hours). Cut into squares to serve.

Variations:

1) Omit crust and serve in dessert bowls garnished with fresh fruit
2) Use 1 cup guava sauce and 1 cup canned crushed pineapple
3) Substitute lime jelly powder for the lemon jelly powder

Delicious Guava Smoothie

Guava Banana Smoothie

This is a nutritious smoothie for breakfast or any time of day. The recipe makes a 10 to 12 ounce drink depending on the size of the banana.

Blend in blender until smooth:

1 banana
1/2 cup guava sauce
1/2 cup yogurt or buttermilk
1-2 ice cubes

Garnish as desired and serve immediately.

Licuar: 
1 plátano, 
1/2 taza (125 mL) pure de guayaba, 
1/2 taza (125 mL) yogourth o leche, 
1-2 cubitos de hielo.

Oatmeal Guava Sauce Muffins

Guava sauce is a tasty and versatile ingredient in baking and as a marinade/condiment for meat dishes. Here is the first of a series of recipes which feature our products. We welcome ideas from our readers as well.


This muffin recipe uses our guava sauce which is sold in 450 g bags and 1 kilogram bags. The sauce is high in fiber and vitamin C. Half a cup of sauce has 5 g of fiber and 190% of the RDA of vitamin C.

Oatmeal Guava Sauce Muffins

2 cups whole wheat or white flour
1-1/2 cups large flake rolled oats
1/2 cup brown sugar
6 teaspoons baking powder
1 teaspoon salt
1 teaspoon ground cinnamon

Combine dry ingredients in a bowl
then add..

2 eggs
1/2 cup oil
1-1/3 cups guava sauce
2/3 cup milk

Mix ingredients by hand until blended.

Add as desired...

1/2 cup raisins or other dried fruit, coconut, chopped nuts, chocolate chips

Put batter in prepared muffin cups and bake at 375F for approximately 15 minutes or until muffin tops are firm.

Makes 16 large or 30 mini muffins

Where in the world are we?


 Our facilities are located in a beautiful valley just outside the city of Tepic, Nayarit, Mexico. The fertile ground is ideal for a variety of crops and we have a large number of fruit trees on our property. We buy guavas from local farmers and all aspects of our operation provide economic opportunies for area residents.


This is the area where guava seedlings are grown and eventually sold to local farmers. 


 Women from the nearby village sort and prepare fruit for processing.


Bins of our product are ready for distribution.
